Sorry - been MIA for awhile

I'm back now though!

Buried under 2 feet of snow and its Christmas Eve!

Doesn't get much better then that!

Only 21 days until Christmas!

Its Pumpkin Cooking Day!

For the last week I have had a large pumpkin sitting on my kitchen counter.

I rescued it from a friend!

Kind of a long story but my friend was about to toss it over the fence as it was almost December and Halloween had long since passed.

But the poor pumpkin was in perfect shape.  Hadn't been carved so it wasn't mouldy or mushy.  Just perfect.

And huge!

So it came home with me that week so I could cook it up and use it for pumpkin muffins, pumpkin bread, pumpkin pie....you get the picture.

Anyways, it had been sitting on my counter long enough so today is the day - into the oven for you!

Cut in open...

Scooped out the seeds....and kept them to roast of course!

Chopped it up....

And into the oven it went.

Well, the first batch is in there right now.

Looks like at least 3 more batches to go.

I guess I will be cooking pumpkin all day at this rate!
